The main active ingredient of garlic extract is allicin, including diallyl sulfide (CH2=CHCH2)2S3, which is a very unstable organic sulfide, easy to degrade, almost completely decomposed after 20 hours at room temperature (20 ℃), and it decomposes faster when heated. Allicin is very unstable, therefore, it is very difficult to extract and preserve allicin.

Allicin is a light yellow powder or light yellow oily liquid, that generally has a strong odor. The melting point is 25°C, the boiling point is 248.6, the density is 1.148g/cm3, and the refractive index is 1.561. Soluble in ethanol, chloroform or ether. The solubility in water is 2.5% (10°C), the pH value of its aqueous solution is 6.5, and an oily precipitate forms when standing. It is miscible with ethanol, ether and benzene. It is unstable to hot alkali and stable to acid. It is produced by the conversion of allicin under the action of allicin. It exists in the bulbs of the lily plant garlic, and also in the bulbs of onions, and has a strong garlic odor and a spicy taste.
